Salmon with beetroot, feta & lime salsa

A new recipe for us tonight. Li is keen on making sure we eat at least one portion of fish a week, which I haven’t done before – I’ve never eaten a lot of fish so I’m still learning how to cook it. I didn’t even know I liked salmon until a few months ago!

Ingredients
200g cooked beetroot
70g feta
2 limes
2 skin-on salmon fillets

Method
Chop the beetroot and feta into small cubes and mix with the juice and zest of one lime and some seasoning.

Season the salmon. Heat 2 tbsp of oil in a nonstick frying pan over a high heat. When hot add the salmon, skin-side down, and cook for 3 mins. Flip over, turn the heat down and cook for a further 4-5 mins. Serve with the beetroot salsa and the remaining lime, cut into wedges.


I had no idea what to expect with a side mixing feta and beetroot with lime but it was a taste explosion, like a party on my tongue. The tartness of the lime really cut through the saltiness of the cheese and complimented the beetroot. And I already knew I liked lime with salmon (Li does a citrus rub for salmon which is delicious)

We served it with some long-grain brown rice cooked in veggie stock – but, naturally, we didn’t get the timings quite right. The salmon was ready about 5 or 6 minutes before the rice but luckily it was easy enough to keep warm. We’re getting better at it though!

I did get a little frustrated when I was looking at the picture on the BBC Good Food website. So the recipe clearly says to mix the beetroot and feta, and like anything that touches beetroot, our feta went a lovely shade of pink. But when you look at the picture they’ve posted, the feta is just sitting on top of the beetroot, not mixed up at all and pristinely white. I get that it’s a publicity shot and not an actual picture of someone’s dinner like ours is but when you’re a fledgling cook and trying really hard to make things exactly the way they are on the recipe, it’s a little… frustrating and disheartening. Wouldn’t the internet be so much nicer if more content was real?

Even if ours didn’t look anything like the recipe picture, we bloody loved it and will definitely be having it again!
